Bunny bread

For the cutest savoury treat this Easter, why not try baking our bunny bread rolls?

Family baking is a great way to spend time together and everyone can get involved by personalising their very own bunnies.

Read on to find the recipe and discover a couple of top tips for this simple bake.

PREP: Approx. 2 hours 15 minutes (including 1 hour 50 minutes proving time)

BAKE TIME: 15 minutes

MAKES: 12 - 15 rolls (depending on the size of your bunnies)

Method

Step 1 - Combine the flour, yeast, salt and caster sugar in a large bowl and mix together.

Step 2 - Once combined make a well in the centre of the flour in preparation for the wet ingredients.

Step 3 - Pour the lukewarm water and olive oil into the well of flour and gradually mix in until it forms a dough.

Step 4 - Transfer the dough to the work top and start to knead. Don’t worry if your dough is a little wet. Keep kneading for 10 minutes until smooth and elastic, adding a little flour if it is just too sticky.

Step 5 - Place your smooth dough into a lightly oiled, covered bowl and leave in a warm place to prove for an hour.

Step 6 - Once your first prove has finished, knead the dough again for a good 10 minutes.

Step 7 - Now split your dough into balls to create little buns. Take a small handful and roll into a ball between your palms. Place any folds underneath to give a smooth finish and then shape into a slight oval. You may want to retain a small amount of dough for creating some extra bunny features.

Step 8 - Time to make the ears! These can take a little practice. There are two options, you can use a pair of scissors and snip into the top of the roll at an angle. These will need rounding off to avoid very pointy ears! We found that snipping downwards fairly close to vertical works best. Alternatively, you can use some retained dough and shape it to make ears to add to the top of your bunnies.

Step 9 - Create the eyes by using a cocktail stick to create holes or by adding seeds. You can take this opportunity to add extra details like noses and tails from any spare dough.

Step 10 - Place your bunnies on a lined tray, making sure to leave enough space between them so they can expand freely as they prove.

Step 11 - Now prove your bunnies again, this time for around 50 minutes. We suggest dusting them very lightly with flour and covering them with a clean tea towel. Then place somewhere warm again.

Step 12 - Heat your oven to 200°C (fan). Bake your bunnies for 15 minutes but keep a close eye as the ears will be the first part to brown. Take out and leave to cool.

Our bunny bread rolls are delicious served on their own with a little butter, or with a filling of your choice.

Top tips!

Fancy a half and half roll? Simply use 250 g white bread flour and 250 g wholemeal bread flour for a different and tasty option.

Looking for other friends to join your bunny gang? Hedgehogs are easy to create by snipping spines across the top and back of the roll using scissors and adding a slightly pointier nose!
